Feuilles de Brick, also known as Brick or Brik pastry sheets, have their roots in North Africa, particularly in Tunisia, where they are a staple of the native cuisine. When I lay them on my baking tray, they looked a little hap hazard and I was concerned that they would not hold their shape.

After my three layers were together, I plopped the filling in the middle, gathered up the sides, and tied it into the purse shape with the green onion. brik is tunisian for a pastry of very thin sheets normally of phyllo dough filled with savory or sweet fillings and deep fried.
